Back in 2007, Francisca began her culinary journey with a humble food truck, showcasing her famous pupusas—a traditional Salvadoran dish. After facing a tough job market, she took charge of her destiny and turned her love for cooking into a source of income. “I said, ‘One day, I want to have my own business,'” Alvarez shared in Spanish, her eyes sparkling with enthusiasm. Her dream has truly come to fruition with the opening of El Buen Paladar on Potranco Road.

A Family Affair

At the restaurant, you’ll find a family-centric atmosphere. Francisca’s daughter and son-in-law are vital players in this venture, helping her run the establishment while she remains the heart of the kitchen. They churn out an impressive 100-200 pupusas daily. William Salinas, her son-in-law, remarked on the evolution of their business, explaining that it took considerable time for the community to embrace the pupusas when they first hit the market. “Nobody knew what a Salvadoran pupusa was,” he said, “but now, they were finally getting the recognition they deserve.”

What makes pupusas so special? For many, it’s the sheer versatility of the dish. “You can eat it for breakfast, lunch, dinner. You can have it as a late-night snack. They’re good all day,” Salinas emphasized. And it’s clear that the community has fallen in love with them, drawing patrons from all over San Antonio to try this delightful cuisine.
