The Broadway location, housed in a former paint store, pays homage to its past in many creative ways. “We like to tell the story of the buildings. We like a great restoration,” Bailey explained. This isn’t just about aesthetics for her; it’s about honoring the tales each location tells.
One of Bailey’s favorite ways to decorate is by hunting for antiques in Texas. She enjoys exploring Round Top with Upward Projects art director Aaron Kimberlin for distinctive furnishings that fit each restaurant’s vibe. “I’m like a hoarder, but I have a place to put stuff,” she laughed, hinting at the vast warehouse brimming with treasures waiting to be chosen for the next Postino.
If you think that running a successful chain won’t allow for fun dining experiences, think again! Bailey frequently returns to San Antonio to indulge in the local food scene. When asked about her perfect day, she shared, “I’m going to start with a cocktail at the bar at Hotel Emma. It’s so unique.” After that, she would relish a meal at Mon Chou Chou, known for its exceptional service.
She also enjoys visiting the Pearl area, possibly stopping for a sweet treat at Lick Honest Ice Creams and finishing her day in Southtown, where she appreciates the late-night vibe at Bar Loretta and the inventive culinary offerings at Hot Joy. “It’s critical for restaurateurs to spend time in new establishments to keep a pulse on the industry,” Bailey noted, admiring the growth and vibrancy of her hometown.
