Mrs. Baird’s has been a household name in Texas since its inception over a century ago. The journey started with Ninia “Ninnie” Lilla Harrison, who discovered her passion for baking while living with her aunt in Tennessee. After marrying William A. Baird in 1901, Ninnie turned her love for baking into what would become a Texas baking empire. Initially selling her baked goods from home to support her family after her husband fell ill, she quickly adapted and began delivering bread by converting the family buggy into a delivery wagon.

From Local to Legendary

The success of Ninnie’s bread was undeniable. By 1915, the family was able to purchase a commercial oven, and by 1917, they were using a modified Ford car as a delivery vehicle. This entrepreneurial spirit led Mrs. Baird’s to become a major player in the Texas baking scene. The company expanded its operations, eventually claiming a bakery in every major city across the state. By the 1960s, Mrs. Baird’s was responsible for one in every four loaves of bread sold in Texas, a testament to its popularity and reach.

A Major Shift in Ownership

Despite its storied past and growth, the company faced financial hardships in the 1990s, leading to a bankruptcy filing in 1996. It was during this tumultuous time that Bimbo Bakeries, a giant in the baking industry based in Mexico, acquired Mrs. Baird’s. The San Antonio bakery continued to operate under Bimbo Bakeries, maintaining the brand’s legacy and presence in Texas for nearly three decades.

The End of an Era

Sadly, the end of 2023 will mark the official closure of the San Antonio bakery, with operations ceasing on October 6. This difficult decision impacts about 140 employees, and many locals are feeling the loss deeply. A spokesperson for Bimbo Bakeries shared the news, stating, “We continuously review and adjust bakery assets…After careful analysis and consideration, we have made the difficult decision to close the San Antonio, TX bakery this fall.”
